Sweet potato fingerlings are significantly richer in Vitamin C, iron and Vitamin A (up to 150 times more beta-carotene) than yams. Sweet and creamy! The specific color of the sweet potato is a strong indicator of its bioactive content, with purple varieties being particularly rich in anthocyanins and orange varieties being high in carotenoids (precursor to Vitamin A). These compounds contribute to the antioxidant, anti-inflammatory, and other health benefits of sweet potatoes such as cardiovascular health, brain health and anti-tumor effects. A delicacy thought previously to be viable only in the south, sweet potatoes are now grown in Pennsylvania, as a nutritional powerhouse with numerous health benefits, including cancer prevention. Research suggests that the high antioxidant content in sweet potatoes can combat free radicals, reducing the risk of cancer development. Additionally, sweet potatoes contain various phytochemicals such as anthocyanins, which have anti-cancer properties. Experts recommend incorporating sweet potatoes into a cancer prevention diet by including them in meals as a side dish or adding them to soups and stews. .They are one of the top food sources of beta-carotene, which converts to vitamin A, as well as fiber and potassium.
