About this product

Varieties like Corno di Toro peppers (sweet Italian frying peppers with zero heat) are often sweeter than standard bell peppers, especially when fully ripe. Sweet bell peppers are standout, nutrient-dense vegetables, renowned for being an excellent source of dietary fiber, vitamins A, B6, E, and K1. Plastic-free, chemical-free bell peppers are particularly prominent for containing significantly higher concentrations of vitamin C and a broader profile of antioxidant phytonutrients than their conventional counterparts.

• Vitamin C Powerhouse: Bell peppers (especially red varieties) contain up to double the vitamin C found in citrus fruits. Organic growing methods, which exclude synthetic fertilizers and force the plant to rely on natural defense mechanisms, have been shown to elevate ascorbic acid (Vitamin C) content further. • High Antioxidant Capacity: The stress of organic farming stimulates plants to produce natural "defenses," resulting in significantly higher concentrations of polyphenols, flavonoids, and phenolic acids. • Abundant Carotenoids: Organic bell peppers are extremely rich in carotenoids like $\beta$-carotene, capsanthin, and violaxanthin. These organic compounds serve as powerful antioxidants that promote eye and skin health. • Mineral Profile: Organically or biologically fertilized sweet peppers generally yield better trace mineral absorption (such as iron, calcium, potassium, and zinc). How Color Influences Nutrition:

The specific nutritional value and antioxidant type depend on the pepper's ripeness and color:

• Red Peppers: Fully ripe, mature red peppers are the sweetest and most nutrient-dense. They boast up to 8 times the vitamin A of green peppers and contain lycopene. • Yellow & Orange Peppers: These supply a slightly different array of antioxidants, including high amounts of violaxanthin and lutein. • Green Peppers: These are the least ripe but they pack higher amounts of calcium, vitamin K, and specific antioxidants like phenolic acids (such as p-coumaric acid) and chlorophyll compared to red or yellow varieties.
